To give you some different ways of supporting Fairtrade this year, bestselling TV chef and author of Home Cooking, Rachel Allen has cooked up some tasty recipes using yummy Cadbury Dairy Milk Fairtrade milk chocolate for you to try at home.

Chocolate, Toffee and Peanut Squares – by Rachel Allen

  • Makes about 24 delicious squares (v)
  • Preparation time: 10 minutes
  • Cooking time: 20 minutes, plus chilling

Ingredients

  • 200g (7oz) Cadbury Dairy Milk Fairtrade milk chocolate, broken into pieces
  • 100g (3 ½ oz) Fairtrade caster sugar
  • 200g (7oz) butter, softened and diced
  • 300g (11oz) self-raising flour, sifted
  • 400ml (14fl oz) dulce de leche or boiled condensed milk
  • 125g (4 ½ oz) Fairtrade salted peanuts, roughly chopped
  • 20 x 30cm (8x 12in) Swiss roll tin

Method

  1. Preheat the oven to 180°C (350°C), Gas mark 4. Line the base of the Swiss roll tin with baking parchment.
  2. In a food processor, whiz together the Fairtrade caster sugar, butter and flour for the shortbread base until the mixture resembles coarse breadcrumbs.  Alternatively, rub together the butter and flour in a bowl with your fingertips and stir in the sugar. Tip into the prepared tin and press down with your hands or a palette knife to level out the mixture.
  3. Place in the oven and bake for about 20 minutes or until golden brown all over, then remove from the oven and allow to cool in the tin.
  4. Once it is cool, spread over the dulce de leche to cover the shortbread, then press the roughly chopped Fairtrade peanuts into it, making sure they are evenly distributed.
  5. Place the Cadbury Dairy Milk Fairtrade milk chocolate in a heatproof bowl set over a saucepan of simmering water and allow to melt. Remove from the heat and pour over the peanut- studded dulce de leche, allowing it to cool, then leave in the fridge for 1-2 hours to set. Once set, cut the mixture into squares in the tin and serve.

 


Chocolate Marshmallow Biscuit Cake – by Rachel Allen

  • Makes about 16 scrumptious bars (v)
  • Preparation time: 10 minutes, plus chilling
  • Cooking time: 10 minutes

Ingredients

  • 450g (1lb) Cadbury Dairy Milk Fairtrade milk chocolate, broken into pieces
  • 150g (5oz) ginger nut biscuits, broken into 1cm (½in) chunks
  • 100g (3 ½ oz) mini marshmallows
  • 2 x 40g Cadbury Crunchie bars, cut into 1cm (½ in) chunks
  • 20cm (8in) square cake tin

Method

  1. Line the base and sides of the tin with baking parchment.
  2. Place the Cadbury Dairy Milk Fairtrade milk chocolate in a heatproof bowl set over a saucepan of hot water. Bring the water to boil, then take the pan off the heat and allow the chocolate to melt slowly. Once the chocolate has melted, remove the bowl from the saucepan and allow the chocolate to cool to just above room temperature. (If it’s too hot, the marshmallows will melt.)
  3. Stir in the remaining ingredients and press into the prepared tin. Place in the fridge to chill for 1-2 hours or until set, then cut into fingers or squares to serve.

 

Chocolate & Banana Bread – by Rachel Allen

  • Makes about 10 tasty slices (v)
  • Preparation time: 20 minutes
  • Cooking time: 1- 1 ¼ hours

 

Ingredients

  • 75g (3 oz) Cadbury Dairy Milk Fairtrade milk chocolate
  • 250g (9oz) self-raising flour
  • Pinch of salt
  • 1 level tsp baking powder
  • 150g (5oz) Fairtrade caster sugar
  • 100g (3 ½ oz) butter, softened, plus extra to serve
  • 50g (2oz) walnuts or pecans, chopped (optional)
  • 2 eggs
  • 1 tsp vanilla extract
  • Finely grated zest of 1 Fairtrade orange (optional)
  • 475g (17oz) Fairtrade whole bananas (about 4 small ones), pealed
  • 50g (2oz) glace cherries (preferably organic), halved
  • 13 x 23 cm (5x9in) loaf tin

Method

  1. Preheat the oven to 170°C (325°F), Gas mark 3. Lightly oil and line the loaf tin with parchment paper.
  2. Sift the flour, salt and baking powder into a large bowl. Add the Fairtrade caster sugar butter and chopped nuts (if using) and, using your fingertips, rub it in until the mixture resembles coarse breadcrumbs.
  3. Whisk the eggs, vanilla extract and orange zest in another bowl. Add the Fairtrade bananas and mash very well with a potato masher.  Then melt the Cadbury Dairy Milk Fairtrade milk chocolate and fold it into the banana mixture.
  4. Make a well in the centre of the dry ingredients and pour in the banana mixture. Gently but thoroughly bring all the ingredients together with a wooden spoon, then pour into the prepared loaf tin. Smooth the top and bake in the oven for 1- 1 ¼ hours or until a skewer inserted into the middle comes out clean.
  5. Allow to cool for 5 minutes before removing the cake from the tin. Serve sliced and buttered
